Ingredients -
- 1 cup – Roop Laxmi Sooji
- 1 cup – Sugar
- ½ cup – Ghee
- ½ cup – Dry Fruits (chopped)
- 4 cups – Water
- ½ tsp – Cardamom Powder
Cooking Directions -

Warm ghee in a heavy pan and adds Sooji.

Stir and cook till the Sooji turns golden brown in color and exudes aroma.

FMeanwhile melt sugar in one cup of water and keep aside.

Boil the remaining water and keep it aside also.

Boil and add hot water to roasted Sooji.

It will bubble a lot as you add the liquids into the pan so be careful and add slowly.

Whisk the sooji continuously as you add the liquids.

Stir gently and cook till the grain of the Sooji grain is soft.

Now add sugar, cardamom and chopped dry fruit.

Cook till it has a semi-solid consistency, while stirring continuously.

Garnish with more cashews and serve Sooji halwa warm!
